The AOP Fruity Comté is a gem of the Jura region. Made exclusively from raw milk of Montbéliarde or Simmental cows, it is crafted in artisanal dairies and aged on spruce boards in cool, humid cellars. At this stage of aging, the Comté develops a remarkable aromatic complexity of roasted hazelnut, salted butter, dried fruits, and vegetal notes. Its melting texture features some tyrosine crystals that make their appearance. This Comté is ideal for tasting as an appetizer, on a cheese platter, or to enjoy at any time. For a perfect pairing, match it with a Tradition white wine, whose complexity and oxidative notes enhance the cheese's aromas.
