Serra da Estrela Cheese is made from raw milk of local sheep breeds (Bordaleira or Churra Mondegueira), and it is curdled using thistle flowers, a unique traditional method. This cheese comes in two forms: "amanteigado", which is soft and creamy, often wrapped in cloth to retain its melting texture, and "curado", which is more aged, with a firm and crumbly texture. It offers subtle aromas of milk, plants, and flowers, with a slight acidity. Produced between November and May in the mountainous region of Serra da Estrela.
