The Tomme de Savoie IGP is a traditional cheese from the French Alps, produced for centuries in Savoyard farms. Made from partially skimmed raw cow's milk, it is distinguished by its thick, gray rind, often marbled with natural flora. Its ivory paste, dotted with irregular holes, reveals subtle aromas of hazelnut, fresh grass, and sometimes a slight acidity. It is aged in a cool cellar with regular washings. This rustic and authentic cheese is enjoyed in slices, in salads, or melted in mountain dishes. It pairs perfectly with a light red wine such as a Gamay or a Savoie Pinot Noir.
