The Brie de Melun AOP is a French artisanal soft cheese made from raw cow's milk. It is produced in the Île-de-France region, located east of Paris. This cheese is appreciated for its creamy texture and pronounced lactic aromas. The production of Brie de Melun begins with the collection of raw milk from cows, which is then carefully processed to allow for maximum moisture retention in the curd. The curd is then hand-molded and aged for a period of 6 to 8 weeks.
