Our Sheep Cheese aged in Sol de Naranja Wine is a true gem for cheese lovers. The maturity and depth of flavor characteristic of our cheeses are enhanced by the infusion of Sol de Naranja wine, creating an elegant fusion full of nuances. The Sol de Naranja Wine is produced by the small Bodega Gallardo in Vejer de la Frontera.
Aging: Between 4 and 7 months. In the final aging period, the cheese is bathed in olive oil and balsamic cream of Sol de Naranja wine to enhance its incredible flavor and aroma.
Intensity: medium due to its special curing and being covered with balsamic cream flavored with Sol de Naranja wine.
Rind: natural, coated with oil and Sol de Naranja wine.
Characteristics: white cheese with an intense flavor on the palate and firm texture. Bathed in balsamic cream flavored with Sol de Naranja wine.

What is Sol de Naranja? Sol de Naranja wine is a special wine from Bodegas Gallardo. It is a naturally sweet wine with oxidative aging. Oranges are macerated, and nuances of matalauva, cardamom, dried apricots, orange blossom, along with the usual aspects of oxidative aging such as dried fruits are obtained. Very characteristic flavors and aromas are achieved with an unbeatable harmony. Cheese aged in balsamic cream flavored with Sol de Naranja wine resulting from the joint texturization of Sol de Naranja wine, xanthan gum, and grape must caramel.

Ingredients: pasteurized goat milk, rennet and calcium chloride, salt, lactic ferments, grape juice caramel, xanthan gum, Sol de Naranja wine (contains sulfites).
