This sausage, with its traditional recipe, combines lean and fatty pork, a subtle seasoning of spices, and a touch of milk that adds roundness and softness to the palate. The natural casing and slow drying give it a rustic appearance and incomparable flavor, true to the charcuteries of yesteryear. It will find its place on a charcuterie board, accompanied by aged cheeses and a good red wine, but can also be enjoyed simply, sliced thinly for immediate pleasure. Tasting advice: to reveal all the subtleties of your sausage, slice it thinly at the last moment, ideally at room temperature.
