Our Spicy Fresh Chorizo is handcrafted in our workshop, following the traditional Galician recipe. This sausage is the foundation of Galician spoon dishes, as it is used to enrich the flavor of hearty meals like Galician Stew and Lacón with Turnip Tops.

The blend of minced meats and fresh pork belly is carefully seasoned with salt, garlic, and the exact combination of sweet and spicy paprika. This selection of ingredients not only gives it its characteristic intense red color but also that desired smoky and zesty flavor.

Being a lightly cured (fresh) chorizo, it maintains great juiciness and flexibility, making it suitable for any type of cooking.

The quality of the pork and the marinade recipe are the secrets of our chorizo:

  • Traditional Marinade (La Zorza): We use the same base as "zorza" (the minced meat before stuffing), which is allowed to marinate with the seasoning for the necessary time for the meat to absorb all the flavors of garlic and paprika.
  • Double Paprika: The combination of sweet paprika (color and aroma) and spicy paprika (kick) ensures a complex and addictive flavor profile that appeals to both spicy food lovers and those who appreciate a smoky and spiced touch.
  • Cooking Versatility: Its fresh and lightly cured nature makes it suitable for boiling (ideal for releasing flavor and fat into broths), frying (for the classic chorizo in wine) or grilling (remaining tender and very tasty).

This chorizo is a versatile ingredient in the kitchen:

  1. Stew: Add it to the cooking water of legumes, potatoes, or turnip tops. Lightly prick the casing before cooking to release its flavor and fat slowly into the broth.
  2. Fried: Fry it whole or sliced over medium-low heat. For a classic tapa, fry it in white wine or cider; the alcohol will evaporate, and the chorizo will remain tender and juicy.

  • Storage: It is shipped fresh in refrigerated transport. As it is a lightly cured chorizo, it should be kept in the refrigerator. It must be cooked before consumption.
  • Shelf Life: We recommend consuming it within 15 days of receipt or freezing it.
