Blue Stilton is considered the king of English cheeses. It is produced exclusively in three counties in central England (Derbyshire, Leicestershire, and Nottinghamshire). This blue-veined cheese is made from pasteurized cow's milk, molded into a cylinder, and aged for about three months. Its natural rind is dry and slightly wrinkled, while its paste has a characteristic blue marbling. On the palate, it offers a texture that is both crumbly and melting, with powerful aromas of nuts, soft leather, and undergrowth. Traditionally enjoyed with port, Stilton is also a staple on British tables during the holidays.
