Le Touré is a farmhouse cheese made from raw goat's milk, originating from Berry, in the heart of the Centre-Val de Loire. Created by the GIE Berry Touraine to meet a festive and convivial demand, it stands out for its original shape resembling a small, tall, and generous tower. Molded by ladle according to a traditional method, it features a dense and melting soft lactic paste, protected by an ashy bloomy rind with bluish-gray reflections. On the palate, it offers a mild goat flavor, slightly salty, with notes of hazelnut and underbrush. Its aging, which can exceed a month, reveals all its aromatic complexity without excessive intensity. Le Touré is ideally enjoyed at room temperature, accompanied by dried fruits, rustic bread, or melted in a leek tart. It pairs perfectly with a dry and mineral white wine, such as a Sancerre or a Quincy. A generous cheese, easy to share, that combines finesse and character.
