Galician Veal Cachopos: The Flavor of Gourmet Fusion
The Cachopo is a dish that has earned fame for its heartiness and flavor, and in Galicia, we elevate it with a selection of ingredients that make a difference. Our Cachopo is a fresh product, handcrafted in our workshop and ready for you to simply fry.
This gourmet piece is the result of the perfect combination of quality:
- Galician Veal: We use thin fillets of veal, sourced from noble cuts (such as tapa or babilla), ensuring tender and flavorful meat, characteristic of the best Galician meat tradition.
-
Superior Filling: Each cachopo is generously filled with:
- Serrano Ham from the Cellar in thin slices.
- San Simón da Costa Cheese (D.O.P.): This uniquely shaped Galician cheese is characterized by its semi-hard paste, fine texture, and a mild flavor with a distinctive natural smoky aroma, achieved with birch wood. Its excellent melting capacity is ideal for the cachopo.
- Artisanal Breading: The manual sealing of the edges and the breading with flour, egg, and breadcrumbs ensure a final result that is crispy and golden, keeping the melted filling inside.
✨ Quality Guarantee: Craftsmanship and Designation of Origin
We guarantee a fresh product of the highest quality:
- Daily Freshness: The Cachopo is made daily in our workshop with fresh ingredients so that you receive a product ready with maximum quality.
- DOP Smoked: The San Simón da Costa cheese carries the Protected Designation of Origin (D.O.P.), a seal that certifies its origin in the A Terra Chá region (Lugo) and its smoking process with birch wood.
🧑🍳 Cooking Tips: Crispy on the Outside, Melted on the Inside
Your cachopo will arrive uncooked, ready to be fried:
- Preparation: Pour plenty of olive or sunflower oil into a large frying pan and heat it.
- Cooking: Fry the cachopo over medium-low heat, turning it several times until the breading is golden. It is crucial that the heat is not too strong to allow the San Simón cheese inside to melt completely before the breading burns.
- Serving: Serve it freshly made to enjoy the contrast between the crispy breading and the hot melted filling. It can be accompanied by French fries, piquillo peppers, or a light salad.
📦 Storage and Shipping
- Presentation: One piece of veal cachopo, vacuum packed, uncooked.
- Storage: Keep in the refrigerator. We recommend consuming it within 5 days of receipt to maintain freshness and optimal texture of the breading. It is a product that can be frozen if you wish to reserve it for later.
