The Persillé de Tignes is a rare farmhouse cheese, produced exclusively by the Marmottan family in the Tarentaise valley, in Savoie. Made from raw goat's milk (predominantly) and cow's milk, it is distinguished by its uncooked pressed paste, grainy and crumbly texture, and its thick rind with gray and brown hues. As it matures, it develops powerful aromas of cellar, undergrowth, and mushroom, with a peppery hint. Its production relies on an ancestral method: for five days, fresh milk is poured over the curd from the previous day, creating a complex and rustic paste. It is enjoyed with dry white wines or light red wines, and deserves a prominent place on exceptional cheese platters.
