Taken from the tip of the rump, this iconic piece of asados is prized for its tender meat, bold flavors, and especially its outer layer of fat that slowly melts during cooking to nourish the meat and concentrate the aromas. Our Black Angus beef picanha, offered here in its whole (un-sliced) version, comes from American farms known for their consistency and high standards. This rustic breed, raised outdoors, provides juicy, delicate meat rich in buttery and grilled notes, making it unforgettable once grilled. Picanha can be cooked as a steak, in slices, or whole as a roast. It is also available in a sliced version like aiguillette. Butcher's tip: for successful cooking, prefer indirect grilling. Let the fat melt slowly without direct flame, then slice as you would a duck breast. Add a pinch of salt, nothing more.
