The production of Boulette d'Avesnes begins with the collection of cow's milk, which is then mixed with aromatic herbs such as parsley, pepper, tarragon, and cloves. The mixture is then hand-molded into a cone shape and aged for a period of 2 to 3 months in a humid cellar where it is washed with salted water, resulting in a light coating of paprika. This cheese is often served with Belgian beers or robust red wines to complement its intense flavors.
