The poultry meat from the southwest is known for its tenderness, and the filling is homemade, made from minced pork from Tarn. At the heart of the flavorful filling that makes up our chicken chorizo rolls, we incorporate mild spices such as sweet pepper and cayenne pepper in addition to the chorizo. To best cook your chicken chorizo rolls, cooking in a pan is recommended. After letting your meat rest for about 10 minutes in a drizzle of oil, finish by simmering over medium heat in broth for about 30 minutes. Butcher's tip: Cook your chicken chorizo rolls at 180 °C for 40 to 45 minutes in the oven, or in a pan over low heat for 30 to 35 minutes with a bit of oil. Baste them often to preserve their tenderness and allow the chorizo to release all its flavors.
