This cheese made from pasteurized cow's milk is aged with a locally produced artisanal walnut liqueur from Sarlat. Its soft, brown washed rind envelops a melting and creamy paste, with woody aromas of nuts, caramel, and damp cellar. It is ideally enjoyed with a white wine such as Monbazillac or Coteaux du Layon, whose fruity sweetness highlights the nutty notes and the aromatic richness of the cheese.
