L'Etivaz AOP is an exceptional Swiss alpine cheese, produced only during the summer in the chalets of the Vaud Alps. Made from raw cow's milk, immediately processed after milking, it is heated in copper cauldrons over a wood fire, following an ancestral method. This artisanal production gives it a firm to hard texture, ivory to pale yellow in color, and a natural brownish rind. Its taste is bold, fruity, with notes of hazelnut, hay, and sometimes slightly smoky, varying according to the pastures. L'Etivaz AOP is the first Swiss cheese to have obtained an AOC, now AOP, and embodies mountain craftsmanship and respect for the terroir. It is ideally enjoyed at the end of a meal, with dried fruits or rustic bread.
