The Sakura Brick is an original creation by Fabrice Aznarez, born in 2007 from a bridge between French cheese-making tradition and Japanese aesthetics. Produced in Melle, in the Deux-Sèvres, this whole raw milk goat cheese brick is hand-molded and then filled at its core with a genuine Japanese cherry blossom leaf (sakura). This edible leaf imparts a subtle aroma of morello cherry, almond, and fresh greenery into the paste, which perfectly complements the sweet goat cheese flavors. Its melting texture and slightly wrinkled natural rind make it a unique piece, as beautiful as it is tasty. It is ideally enjoyed as a warm toast with a drizzle of honey, or in a salad with arugula and pear.
