Carefully prepared in our workshop in Fonsorbes, this tournedos combines the generosity of a beautiful piece of meat with the precision of artisanal cutting. Searing it over high heat develops a beautiful golden crust while keeping a tender and pink center. A simple pinch of fleur de sel and a twist of the pepper mill are enough to reveal the full intensity of its flavor. Butcher's tip: take the tournedos out of the refrigerator 30 minutes before cooking. Sear it for 2 to 3 minutes on each side in a pan or on the grill, then let it rest for 2 minutes under a sheet of aluminum foil before serving. This will yield a melting and flavorful meat, perfect when accompanied by a gratin dauphinois or truffle mashed potatoes.
