The bone-in pork shank offered by Maison Lascours comes from Tarnais pigs. We work with local breeders from A.P.O (Alliance Porci d'Oc), a partner of the Roussaly cutting workshop in Lacaune. Choosing Tarnais pigs for our shanks and other pork cuts allows us to guarantee you meat of increasingly high quality. The shank is located around the tibia and is also known as the pork hock. This cut has a unique tenderness like many pork cuts, and its cooking methods are limitless. Generally, the bone-in pork shank develops unique flavors and texture when cooked slowly in broth or stew, but for those who are not fans of this type of cooking, do not worry. The bone-in pork shank can be cooked both in a casserole and in the oven accompanied by caramelized shallots, a true delight! Butcher's tip: Cook your pork shank in the oven at 170 °C for 2 hours and 30 minutes, or in a casserole on low heat for 2 hours, with a base of aromatic broth. Baste it regularly to achieve tender, juicy meat and a slightly caramelized skin.
