The AOP semi-fruity Comté is a young version of our iconic Jura cheese. Made from raw milk from Montbéliarde or Simmental cows, it is aged in cool, humid cellars that promote the development of a fine rind and a soft paste. At this stage, its aromas are delicate: cream, fresh butter, green hazelnut, and sometimes a slight floral note. For a refined pairing, accompany it with a Jura Chardonnay whose freshness and minerality highlight the cheese's sweetness without overpowering it.
