To obtain the best cheese possible, producers use young tommes, placed on straw, allowing them to develop an organic taste with great depth. This semi-firm farmhouse cheese with a true black rind is preferred. The St-Nectaire fermier is nothing less than the first AOP farmhouse cheese made from cow's milk in Europe. This cheese is made exclusively in the mountains of the Puy-de-Dôme and Cantal departments, in the heart of the Auvergne Volcanoes Regional Natural Park.
