The forest-style capon roast highlights an exceptional poultry and the typical flavors of the forest. Completely deboned, it is filled with a stuffing made from poultry meat and forest mushrooms, then barded to retain its tenderness during cooking. This delicious combination of the tenderness of the capon and the woody notes of the mushrooms makes it a perfect dish for festive meals. This roast is prepared from capons raised outdoors in the Landes, sourced from our partner poultry producer. The poultry is fed non-GMO corn grain, with a diet composed of 100% plants, minerals, and vitamins, of which at least 80% is grains. Easy to cook, it reveals both the delicacy of the capon and the aromatic richness of the mushrooms. A must-have for festive tables. Butcher's tip: Oven cooking: preheat to 160–180 °C (depending on your oven). Place the roast in a dish, add a drizzle of oil, season with salt and pepper. Allow 1 to 1.5 hours of cooking time per kilo, basting regularly with the cooking juices or a bit of hot broth. Juice tip: for a more flavorful sauce, add a glass of water or broth to the dish, along with a few mushrooms or a touch of fresh cream at the end of cooking. Serve with a sauté of mushrooms, homemade mashed potatoes, or a gratin dauphinois. Do not freeze.
