Butcher's tip: take the roast out of the refrigerator 30 minutes before cooking. Roast at 200 °C for 15 minutes to sear, then continue cooking at 170 °C for about 10 to 12 minutes per 500 g depending on the desired doneness. Let rest for 10 minutes before slicing for tender and even meat.
