The lot includes: Dandieu Family Guinea Fowl – ready to cook - 1.9 kg: sourced from a family farm located in the heart of Chalosse, in the Landes, this guinea fowl is raised outdoors for about 160 days. It benefits from a 100% plant-based, mineral, and vitamin-rich diet, composed of 80% grains, including 80% corn and 20% wheat, locally grown and non-GMO. At the end of its raising, starting from November 15, it receives a milk-based diet, an essential step that makes its meat more tender, juicy, and naturally flavorful. This traditional finishing gives the guinea fowl a unique taste, typical of Landes craftsmanship. Foie Gras Stuffing – Maison Lascours - 500 g: made in our workshops from poultry meat and duck foie gras (20%), carefully seasoned to achieve a melting, balanced stuffing full of character. The guinea fowl and stuffing are delivered separately, allowing you to prepare it to your liking. A great opportunity to enjoy the pleasure of homemade cooking while benefiting from the quality of Maison Lascours products. Preparation of the guinea fowl: Take the poultry and stuffing out of the refrigerator about 30 minutes before cooking. Gently fill the poultry with the stuffing. Brush the poultry with a little melted butter or olive oil, then season with salt and pepper. Oven cooking: Preheat to 160 °C. Allow about 1 hour of cooking per kilogram. Regularly baste the poultry with its juices to keep it moist. Let it rest for 30 minutes under aluminum foil before carving to ensure the meat remains juicy. To enhance the meal: Serve the guinea fowl hot, accompanied by a potato gratin, truffle mashed potatoes, or roasted vegetables. A simple sauce made from the cooking juices or a light drizzle of truffle cream is enough to reveal all its aromatic richness.
