The Galician sargo (diplodus sargus) is a Galician fish similar to the wild dorada, but it is rounder and has a stronger flavor. It is a difficult fish to catch as it is found in areas where the sea is very rough, making it highly sought after by sport fishermen who fish for it with rods or spears among the coastal rocks.
The Galician sargo that we offer at Mariscos O Grove is entirely caught in the area of Negro and La Lanzada using sustainable fishing methods such as gillnets or trammel nets by the local small-scale fleet, which ensures this fish is of the highest quality.
Galician Sargo in the Diet
It has an exquisite meat highly appreciated especially in Galicia as it is not as well known in Spain. The Galician Sargo is a fish with white meat that flakes into small pieces when cooked. Due to its fat content, it is an ideal Galician fish for grilling, baking, or pan-frying.
This Galician fish is ideal to include in your weekly diet as it is high in protein and has a high content of fatty acids and omega 3.
