A generous meat, accompanied by a homemade stuffing to delight young and old alike. The pork paupiettes are made from pork sourced directly from the Roussaly slaughterhouse in Lacaune in the Tarn and its breeders from the A.P.O (Association Porci d'Oc). Our recipe for pork paupiette with raclette onion is a simple and comforting preparation. It consists of local meat filled with a homemade stuffing: a mixture of sausage meat and onion, seasoned with salt, pepper, and a mix of spices. All of this is wrapped and tied by hand with a belly and a piece of raclette cheese placed on top. A true traditional dish, the pork paupiette embodies family and comforting cuisine. Generous, melting, and full of flavors, it brings people together around a simple and friendly meal, where the authenticity of the terroir can be savored in every bite. Butcher's tip: Cook your pork paupiettes at 180 °C for about 45 minutes in a lightly oiled dish. You can also prepare them in a pan or casserole, on low heat and covered, for 35 to 40 minutes. Baste them regularly for tender and juicy meat.
