Selles-sur-Cher is a raw milk goat cheese, emblematic of Berry, produced in fourteen cantons spread across Loir-et-Cher, Indre, and Cher. It is presented in the form of a slightly beveled disk, with a fine, blue-gray ash rind made from vegetable charcoal. Its white paste, firm at the core, becomes melting in the mouth after a few days of aging. This cheese reveals subtle aromas of hazelnut, mushroom, and undergrowth, with a vegetal and milky touch. Selles-sur-Cher is ideal for tasting on a platter, accompanied by country bread and a dry white wine from the Loire Valley.
