The Tomme from the Pyrenees is a typical artisanal cheese from the Pyrenees, made from pasteurized goat and sheep milk. This mixed cheese combines the fruity sweetness of sheep's milk with the lively character of goat's milk, in a pressed uncooked cheese that is aged for a long time. Its natural rind, thick and bumpy, evokes the Pyrenean landscapes, while its ivory paste develops a soft and sometimes crystalline texture. On the palate, this tomme reveals woody, milky, and slightly salty aromas, with a beautiful complexity. It is ideally enjoyed with a round white wine such as a Côtes de Gascogne or a Viognier, or a fruity red from the Southwest like a Marcillac or an Irouléguy, which complement its flavors without overpowering them.
