How to cook Galician sardines
Grilling is their queen preparation: over charcoal embers with a bit of coarse salt, 3-4 minutes on each side. Serve them directly on Galician bread to absorb the juices. They also turn out very well pan-grilled. Boneless fillets, marinated in salt, olive oil, and garlic for 30 minutes and served cold, make a high-level tapa.
