This young breed from northern Poland, in the Mille Lacs region, is the result of a cross between rusticity and finesse. Selected from heifers under 20 months old, raised in small herds, the animals are first fed grass, then fattened with a natural mix of grains and beet pulp. This method of raising gives the meat an incredibly tender texture, fine and generous marbling, and above all, sweet and balanced notes. The tenderloin, known to be the noblest cut of beef, reveals here a beautiful juiciness, an appetizing crust when cooked, and an original flavor, very slightly sweetened by the beet. The Black Pearl tournedos is perfectly suited for quick cooking, whether in a pan or a casserole. It can be served alone or elevated in the style of Rossini. Butcher's tip: sear over high heat for 2 minutes on each side, let rest, and serve medium-rare to reveal all its tenderness.
