An emblematic local breed of the South-West, Bigorre black pork is raised freely, outdoors, and fed exclusively on herbs, acorns, and non-GMO grains. This slow and respectful breeding method allows the meat to develop abundant and melting intramuscular fat, which gives it all its juiciness and complex aromas when cooked. The Côte Échine is cut from the most tender and flavorful part of the pig: juicy, tasty, and almost confit after slow cooking, it offers sweet notes of hazelnut and grains. This meat is now present on the finest French gastronomic tables. It is best enjoyed simply grilled or slowly roasted to reveal all its richness. Butcher's tip: take the chop out 30 minutes before cooking. Cook on low heat to melt the fat and tenderize the meat. It pairs well with crushed potatoes or a sauté of mushrooms.
