To obtain the protected designation of origin, the capon must be raised in total freedom for at least eight months, fed exclusively on grains from the designated area, milk, and its by-products. It finishes its breeding cycle with four weeks of fattening on spruces, ensuring a melting texture and incomparable taste. This method of preservation allows for natural maturation, essential for preserving tenderness and intensifying aromas.
