The chicken thigh in paupiette style is prepared artisanally with a homemade stuffing. This mixture allows the deboned chicken thigh to develop unique flavors and textures, enabling you to enjoy a fine and delicate dish. It is tender and light chicken meat. The chicken thigh paupiette consists of a stuffing that contains a blend of minced pork, beef, and lamb. This mixture of meats is then seasoned with a powder called 'la belle farce garlic parsley', making it melt-in-your-mouth and generous in flavors. Once the stuffing is placed in the center of the chicken fillets, everything is then wrapped. Our paupiettes are wrapped with a slice of Tarn pork. Butcher's tip: Cook your chicken paupiettes at 180 °C for 40 to 45 minutes in the oven, or in a pan over low heat for 30 to 35 minutes with a drizzle of oil. Baste them regularly for tender and juicy meat, then let them rest for 5 minutes before serving.
