Dive into the flavors of the Southwest with this Gascogne-style stuffed capon, a perfect blend of tradition, terroir, and indulgence. This lot combines an exceptional free-range poultry and a typically Gascogne stuffing, prepared with pork, foie gras, figs, and Armagnac. The lot includes: Dandieu Family Capon – ready to cook - 3 kg: a free-range poultry raised outdoors in the Landes, known for its tender and flavorful meat. Truffle Stuffing – Maison Lascours - 2 x 500 g: crafted by our butchers from French pork, duck foie gras, and dried figs, enhanced with a hint of Armagnac, spices, and aromatic herbs for a sweet-salty touch emblematic of the Southwest. The capon and stuffing are delivered separately, allowing you to prepare it to your taste. A wonderful opportunity to enjoy the pleasure of homemade cooking while benefiting from the quality of Maison Lascours products. Preparation of the capon: Take the capon and stuffing out of the refrigerator about 30 minutes before cooking. Gently fill the capon with the stuffing. Brush the poultry with a bit of melted butter or olive oil, then season with salt and pepper. Oven cooking: Preheat to 160 °C. Allow about 1 hour of cooking per kilo. Regularly baste the capon with its juices to keep it moist. Let it rest for 30 minutes under aluminum foil before carving to ensure the meat remains juicy. To enhance the meal: Serve it with a gratin dauphinois, sautéed vegetables, or sweet potato puree.
