Crafted by our poultry producer in the Landes, this roast is prepared from a free-range guinea fowl raised outdoors for at least 91 days. The poultry is fed non-GMO corn grain, with a diet composed of 100% plants, minerals, and vitamins, including a minimum of 80% grains. The foie gras comes from traditional ducks raised in the Landes, also fed non-GMO corn grain. The whole is wrapped in pork to preserve moisture and concentrate the flavors during cooking. A festive dish that is simple to prepare, resulting in a melting and refined outcome that showcases the expertise of French poultry. Butcher's tip: Oven cooking: preheat to 180 °C. Place the roast in a dish, add 2 to 3 tablespoons of oil, season with salt and pepper. Cook for 1 hour 15 minutes to 1 hour 30 minutes, basting regularly with its juices or a bit of hot broth. Juice tip: add a broth cube to a glass of hot water with a few bay leaves or a bit of pepper to flavor the juice. Rest: let it rest for 30 to 45 minutes before slicing for a more tender meat and well-balanced flavor. Serve with a potato gratin, roasted vegetables, or parsnip puree. Do not freeze.
