The Festive Menu Truffled Stuffed Poulard includes: Duck foie gras semi-cooked – Maison Lascours Selection - 400 g: a delicately seasoned foie gras, with a melting texture and balanced taste. Family Dandieu Poulard – ready to cook - 1.8 kg: a free-range poultry raised outdoors in the Landes, known for its tender and flavorful meat. Truffle stuffing - 500 g: to be inserted into the poulard before cooking to enhance its meat with a noble and delicate aroma. Truffle mashed potatoes - 3 x 400 g: a creamy and fragrant side dish, ideal for accompanying the poultry. The poulard is delivered unstuffed: you just need to fill it with the truffle stuffing before cooking. A complete meal, ready to assemble, that combines the aromatic richness of truffle with the tenderness of poultry for a tasting experience worthy of the finest tables. Butcher's tip: Preparing the poulard Stuff the poulard with the truffle stuffing, then close it with cooking twine. Place it in a large dish, brushed with butter or oil, then salt and pepper it. Oven cooking Preheat to 160 °C. Allow about 1 hour of cooking per kilo. Regularly baste the poultry with its juices to keep it tender. At the end of cooking, let it rest for 30 minutes under aluminum foil before carving. To enhance the meal: Serve the poulard hot, sliced, accompanied by the truffle mashed potatoes.
