Raised outdoors for about 150 days, this rustic, slow-growing poultry benefits from a 100% plant-based, mineral, and vitamin-rich diet, composed of 90% locally grown, non-GMO corn. At the end of its raising, the capon receives a milk-based diet, a traditional Landes know-how that gives its meat a particularly tender, moist, and slightly pearlescent texture. Gascogne-Style Stuffing – Maison Lascours - 500 g: prepared by our butchers from French pork meat, duck foie gras (20%), dried figs (15%), and Armagnac (1.5%). A typical sweet-salty blend from the South-West, enhanced with spices and aromatic herbs, for a generous and flavorful stuffing. The capon and the stuffing are delivered separately, allowing you to prepare it to your taste. Preparation of the capon: Take the poultry and stuffing out of the refrigerator about 30 minutes before cooking. Gently fill the poultry with the stuffing. Brush the poultry with a little melted butter or olive oil, then season with salt and pepper. Oven cooking: Preheat to 160 °C. Allow about 1 hour of cooking time per kilogram. Regularly baste the poultry with its juices to keep it moist. Let it rest for 30 minutes under a sheet of aluminum foil before carving to ensure the meat remains juicy. To enhance the meal: Serve the capon hot with its melting stuffing and a potato gratin, sweet potato puree, or roasted vegetables.
