The Gourmet Menu Roasted Guinea Fowl with Duck Foie Gras: Duck foie gras ballotin semi-cooked – Maison Lascours Selection - 2 x 150 g: a melting foie gras, with a delicate flavor and perfectly seasoned. Roasted guinea fowl with duck foie gras - 1 kg: a deboned and barded poultry, stuffed with a foie gras preparation, for a subtle alliance between the finesse of the guinea fowl and the richness of the foie gras. Truffle mashed potatoes - 2 x 400 g: a creamy side dish with truffle notes, ideal for accompanying the poultry. A complete and easy-to-prepare festive menu that combines the traditional know-how of Maison Lascours with the indulgence of festive flavors. Butcher's tip for preparing the roasted capon with duck foie gras: Take the roast out of the refrigerator 30 minutes before cooking to bring it to room temperature. Place it in a large dish, brushed with oil or butter, then season with salt and pepper. Oven cooking: Preheat to 180 °C. Bake for 1 hour 15 to 1 hour 30 (for about 1 kg), regularly basting the roast with its juices. Regularly baste the roast with its juices during cooking to maintain its tenderness. At the end of cooking, let it rest for 15 to 20 minutes under a sheet of aluminum foil before carving. To enhance the meal: Serve the roast hot, accompanied by the truffle mashed potatoes.
