Butcher's tip: Preparing the capon Place the capon in a large dish, brushed with butter or oil, then salt and pepper it. For more tenderness, add a splash of water or broth to the bottom of the dish before baking. Oven cooking Preheat to 160 °C. Allow about 1 hour of cooking per kilo. Regularly baste the capon with its juices during cooking to maintain its tenderness. At the end of cooking, let it rest for 30 minutes under a sheet of aluminum foil before carving.
